We don’t know about you, but it is simply impossible for us to live without sweets. And what could be better than homemade doughnuts? Today we want to share with you two delicious recipes: how to make Nigerian doughnut and how to make Nigerian puff puff. And you can choose for yourself which one you like best!
What you will need:
✪ 250 grams of plain flour
✪ 60 grams of sugar
✪ 1 packet (7 grams) of dry yeast (active)
✪ 70 ml of warm milk
✪ 50 ml of warm water
✪ 20 grams of butter (room temperature)
✪ 1 egg
✪ some salt (if your butter is unsalted)
✪ 1/4 teaspoon of nutmeg
✪ jam of your choice
Step 1. Grab a bowl and put your yeast in it. Pour the milk and water; add sugar and nutmeg (if you chose to go with it). Mix them together and sprinkle with salt. Continue mixing until the sugar has dissolved. Add your egg and mix one more time.
Step 2. Sift your flour into the bowl. Sifting is important to get the desired result. Mix it all together and then knead until your batter is smooth and firm. It usually takes about 5 minutes.
Step 3. Add the butter to your batter (try saying this fast 5 times in a row :) ). Knead until your dough is elastic and soft and doesn’t stick to the fingers. If it still sticks, do not fret. Just sprinkle it with a little flour and knead some more.
Step 4. Take another bowl and oil it. Transfer your dough in this new bowl, cover it with some cloth and leave in a warm place to rise. If it doesn’t rise after an hour, put it in an unlit oven over several cups of hot water until it does.
Step 5. After an hour, your dough should have become twice its initial size. Sprinkle some flour onto your work surface and place your dough onto it. Remove the excess air by pressing on it few times, put it back in your oiled bowl and place the bowl somewhere cool for 20 minutes.
Step 6. Take your dough out and roll it on your work surface so it is about 1 cm thick. If you don’t know how to make doughnut shapes, it is very easy. Take a glass and, for example, a bottle cap and make a big circle with your glass and a small one in the middle with your bottle cap. Out of leftover dough, you can make more donuts, or you can just fry the doughnut holes.
Step 7. Gently transfer the doughnuts on a tray covered with flour (so the doughnuts won’t stick to the tray). Cover them with a cloth and place the tray somewhere cool, so that your donuts will rise once again. While they are chilling, pour vegetable oil in a fryer or a large pan and heat it to 190C degrees.
If you don’t know how to determine the temperature, take some excess dough and drop it in the oil. If it gets brown right away, the oil is too hot. If it sinks and takes too long to fry, the oil is too cold. The dough should immediately start to sizzle and cook. That is how you know that the oil is hot enough.
Step 8. Remove the cloth from the tray and leave your doughnuts for another 10 minutes. Then, one by one, remove excess flour and place them in the oil. Fry each side for 40 seconds until your donuts get nice and golden. It is better to fry them in small batches.
Step 9. Put your fried donuts on a rack or on paper towels to soak excess oil and leave them to cool. If you want, sprinkle them with powdered sugar or cinnamon. And you are done!
Nigerian method of how to make doughnuts is not all that different from any other way of making doughnuts. However, to make it special, you can place some jam in the doughnut hole. It will make a world of difference!
Puff puff recipe

If you don’t know how to make puff puff or what makes it so different from the Nigerian doughnut, we will help you with that. The main difference is that they are vegan (no milk, eggs or butter) and they look like traditional donut holes. And they are actually very easy to make!
What you will need:
✪ 375 grams (or 3 cups) of flour
✪ 16 grams (or 4 teaspoons) of dry yeast (best to use quick rise)
✪ 200 grams (or 1 cup) of sugar
✪ 2 grams (1/2 teaspoon) of nutmeg
✪ 2 cups of lukewarm water
✪ oil for frying
Step 1. In a large mixing bowl, mix all of your dry ingredients. Gradually add water and continue mixing. When you see that the batter is smooth and thick, stop mixing.
Step 2. Cover your bowl with a cloth and put it in a warm spot for about an hour. Don’t leave it for too long, or your batter will become too chewy and rough.
Step 3. Heat your oil in the fryer or a frying pan. Use the instructions on how to check the temperature of your oil from the previous recipe.
Step 4. Form a medium-sized ball of dough and put it in the oil. You can fry several puff puff at once. Turn them over from time to time until they are golden brown all over. Repeat for the whole batch.
Take the puff puff out of the oil and put them on a paper towel to soak in the excess oil. Let them cool for a bit. Sprinkle with powdered sugar, if you want. The puff puff are done!
